Basic Mayonnaise

Basic Mayonnaise (1 cup)

1 egg yolk
dash cayenne
½ tsp dry mustard
2 T lemon juice (fresh squeezed)
1 cup extra virgin olive oil
Combine 1/4 cup oil & all other ingredients in blender or food processor. Turn on blender and slowly add rest of the oil in a slow stream. If the mayo is too thick add a little bit of water to thin…. Enjoy! Homemade mayo is one of life’s greatest treats! It will last in the refrigerator for about a week!
